Linzer eyes

In the Christmas bakery

The Christmas decorations are in place and the first candle has been lit on the Advent wreath. High time for Christmas cookies! We have a delicious and simple recipe for you here. It's wonderful when the smell of freshly baked cookies wafts through the house. Good luck!

Ingredients:

  • 200 g powdered sugar
  • 400 g butter
  • 600 g Flour
  • 2 packets of vanilla sugar
  • 2 egg yolks
  • A dash of lemon juice and/or zest of a lemon or orange (organic)
  • Jam for filling (we recommend apricot or currant)

Preparation:

  1. Place the flour on the work surface, cut the butter (not too cold) into pieces and knead with the flour.
  2. Then add the egg yolks, powdered sugar, vanilla sugar and lemon zest or juice and work into a dough.
  3. Wrap the finished dough in cling film and chill in the fridge for 1 hour.
  4. Preheat the oven to 180 °C (top/bottom heat).
  5. Roll out the dough (approx. 3 mm) and cut out the cookies (tops and bottoms). There are various options here: The classic Linzer eyes with 3 holes, with one hole, star-shaped, etc.
  6. Bake the cookies for approx. 10 minutes and leave to cool.
  7. Then spread jam on one underside of each cookie and place a cookie with holes on top. Sprinkle with powdered sugar.
