
Semolina dumpling soup
A traditional Austrian dish
Semolina dumpling soup is a classic of Austrian cuisine and is served in numerous restaurants from Vienna to Vorarlberg. With a handful of simple ingredients, dumplings are formed, which have always been served as a popular and filling soup garnish.
Recipe for approx. 15 semolina dumplings
Ingredients:
- 80 g durum wheat semolina
- 30 g butter
- 1 egg
- some chives
- salt, nutmeg
Preparation:
- Soften butter.
- Cut the chives into small rolls.
- Mix the egg, semolina, a little salt and a pinch of nutmeg and the chives with the soft butter.
- Leave to rest for approx. 15 mins.
- Then form small dumplings with two teaspoons (approx. 15 pieces)
- Leave to stand in slightly boiling salted water for approx. 25 minutes.
- Serve the dumplings with soup.
