Semolina dumpling soup

A traditional Austrian dish

Semolina dumpling soup is a classic of Austrian cuisine and is served in numerous restaurants from Vienna to Vorarlberg. With a handful of simple ingredients, dumplings are formed, which have always been served as a popular and filling soup garnish.

Recipe for approx. 15 semolina dumplings

Ingredients:

  • 80 g durum wheat semolina
  • 30 g butter
  • 1 egg
  • some chives
  • salt, nutmeg

Preparation:

  1. Soften butter.
  2. Cut the chives into small rolls.
  3. Mix the egg, semolina, a little salt and a pinch of nutmeg and the chives with the soft butter.
  4. Leave to rest for approx. 15 mins.
  5. Then form small dumplings with two teaspoons (approx. 15 pieces)
  6. Leave to stand in slightly boiling salted water for approx. 25 minutes.
  7. Serve the dumplings with soup.
