
Elderflower syrup
The sweet pleasure from nature
Elderflowers are often found in gardens or at the edge of the forest at the beginning of summer with plate-sized white-yellowish flowers. These exude an intense, sweet smell. Elder is also known as lilac berry, elder or elderberry. Elder is versatile and is said to have anti-inflammatory, antipyretic and pain-relieving properties. The syrup made from the flowers is particularly refreshing and delicious.
Ingredients:
- 40 pcs. Elderflower
- 2 l water
- 4 pcs. Organic lemons
- 50 g citric acid
- 3 kg sugar
Preparation:
Clean the elderflowers, cut the lemons into slices and place everything in a larger container together with the sugar and citric acid. Cover and leave in a dark place for approx. 3-4 days. Stir once a day so that the sugar can dissolve. Once the sugar has dissolved, strain the mixture through a fine cloth into a saucepan. Bring to the boil once and then pour into sterile bottles. Store in a cool, dark place. The elderberry syrup can be kept unopened for up to 1 year.
