The Walserstolz Mountain Cheese

The pride of the Walser people is a cheese

Mountain cheese can be found in many regions, but Walserstolz mountain cheese can only be found in the Großes Walsertal. It is made by hand using traditional methods and with a great deal of knowledge, experience and feeling in the Großwalsertal alpine dairies and during the alpine summer in the Großwalsertal Alps. And they are proud of it, the Walser people. And understandably so. Because Walserstolz mountain cheese tastes good.

The art of dairy farming has been practiced here for centuries and passed down from dairy farmers to younger generations.

Traditional three-stage farming

From the farm via the Maisäß to the alp and back again

The Walser people brought the three-stage economy with them: The homestead, the Maisäß (preliminary stage to the alp, which is grazed around May) and the alp. The animals are still driven up to the alps during the summer months. In summer, the alps offer the cows lush meadows with lots of alpine flowers, grasses and herbs. The Großwalsertal cows can therefore consider themselves lucky, as they are on a summer retreat, so to speak. And you can taste this in the Walserstolz mountain cheese and the other alpine products made up there. While this means relaxation for the animals, for the alpine herdsmen and women it is intensive but fulfilling and important work, which they carry out with passion and a great deal of traditional knowledge.

More than a third of the total area of the Großes Walsertal - over 7,000 hectares - is made up of alpine meadows and pastures. The colorful flower mats transform the alps of the Großes Walsertal into attractive landscapes.
